Sourdough starter, created right here at Birdsong, using Kialla 18% protein premium baker’s flour and rainwater.
I bake sourdough almost everyday at the moment, so there’s always fresh starter about!
Once purchased, it can sit dormant in the fridge for a week or so if needed, and then be reactivated by allowing it to come back to room temp, and feeding it fresh flour.
To feed the starter: use 1/2 cup of sourdough starter, 1/2 cup filtered water and 1 cup of flour. Let sit on the bench until it has at least doubled in size and looks active and bubbly. then either re-feed and make sourdough, or place it in the fridge.
